I have been making ghee / clarified butter at home lately and was having a lot of ghee residue with me. Every time, I used to make ghee, I would have milk solids (white-golden) leftover which I was not using. I read a article somewhere that it is very high in protein and energy. So, I decided to use it to make “MILK CAKE”, that my little ones could munch on and gain its benefits.


I made this recipe in just 5 minutes in total after making ghee. This is just three ingredient recipe and will definitely blow your minds and then you will never throw away those milk solids or give it to your maids or house helps.

“Khoya Capsicum or Mawa capsicum” is a rich and creamy dish which uses khoya as a curry base along with capsicum and carrots. I made this dish as I am a capsicum lover and thought of making a rich dish which could also be served to guests at a party.

For those who don’t know what is khoya, it is a dairy product widely used in South Asian cuisine of India, Nepal, Bangladesh and Pakistan. It is made of either dried whole milk or milk thickened by heating in an open iron pan. (source: Wikipedia). Generally many indian sweets use khoya or mawa as main ingredient and you can easily make the khoya at home. For this recipe, I used leftover residue of ghee /clarified butter which I made at home.

“Achari gobhi” is a nice twist to traditional aloo gobhi prepared in most indian households. I had this once in a restaurant and was wondering where is it getting its taste from. Then I discovered the secret ingredient : “yogurt”. Yes, I had never even thought that yogurt can be added to any cauliflower recipe. My hubby is big fan of “aloo gobhi” and this version of cauliflower is more healthy with no potatoes so a big “YES” from my side too.

“Kesar Malai Kulfi” is one dessert which is relished whole summer in different ways. Those who are away from home in India, desire it even more. I missed it in USA and had store bought versions but they never taste the same as in India.


This is a little exhaustive recipe but sure is worth it. I have flavored the kulfi using saffron and in nuts, I have use almonds. But, you are free to play around with these and add your choice of nuts and skip saffron if you do not prefer it. “Ghee” or “Clarified butter” is made in indian households from the fresh cream or malai collected over a period of time from milk or curd. For those who don’t know how you get cream, it is made from boiled milk which is cooled down and then a layer of fresh milk cream or malai is formed over its surface.

Homemade Ghee is considered sacred and used for religious purposes in puja, as it is considered as purest. Today ghee is available in market whether in India or abroad but nothing tastes as pure and as delicious than homemade version. So here I am sharing the recipe of making ghee from milk cream or malai. Hope this helps you out.
