Potato Broccoli Cutlets

Potato Broccoli Cutlets
All kids love potatoes and when you combine it with broccoli, it becomes more nutritious. Adding in little cheese makes the kids love it and asking for more. This recipe has a little twist from conventional potato cutlets as it has broccoli but I promise they taste as good.


Serves: 4
Preparation Time: 10-15 mins.
Cooking Time: 20 mins.

Ingredients:

2 medium sized potatoes
8-10 florets broccoli
½ parmesan cheese
1 cup homemade breadcrumbs
½ teaspoon oregano
Salt to taste
Black pepper to taste

Directions:
  1. Boil the potatoes and mash them.
  2. Steam or microwave broccoli so that it is soft and tender. I did it on microwave, keep the washed broccoli florets in microwave safe bowl and put some water (¼ cup). Cover and microwave on high for 3 mins.
  3. Grate the parmesan cheese.
  4. Mix all the ingredients in a mixing bowl including the spices and homemade breadcrumbs.
  5. Divide the mixture into 8 equal portions and make small circular patties it.
  6. Line the baking tray with aluminium foil and spray some cooking oil.
  7. Preheat the oven at 375 F and place your patties on the tray. Bake them for 10 mins or golden brown and flip them.
  8. Bake for another 10 mins or until golden brown from the other side.
  9. Serve hot with Mint-Mayo dip or regular tomato ketchup does just fine.

Tips:

  • You can make these ahead of time and freeze them in ziploc bag. Just bake and tasty snack is ready in minutes.
  • For extra crispiness, you can also deep fry them or coat the patties with extra breadcrumbs.
