Zucchini Cheese Rolls

Zucchini Cheese Rolls

Zucchini is one of abundant summer vegetable available here in USA. I was looking for a recipe which is kid friendly and healthy at the same time. So, came up with Cheesy Zucchini rolls rather than the regular potato rolls, they sounded more exciting too, at least to my kiddo. :) This recipe is a delicious snack for kids and a great appetizer to be served at parties.


Serves: 2-3
Preparation time: 2 mins.
Cooking time: 5 mins.


Ingredients:


1 medium sized zucchini
3-4 sprigs fresh parsley
Crumbled Goat cheese
Few drops Lemon juice
Olive oil for brushing
Salt to taste
Black pepper to taste


Directions:


  1. Wash the zucchini and slice it lengthwise to form thin ¼ inch slices.
  2. Put the grill pan on medium heat meanwhile, you prepare zucchini.
  3. Brush the zucchini slices with olive oil and season with salt and pepper.

  1. Now grill the zucchini on both sides until you get the golden brown grilled marks.
  2. Mix together goat cheese, chopped parsley, pinch of salt and few drops lemon juice and bring stuffing together.

  1. Place ½ teaspoon of the stuffing ½ inch above the edge of zucchini and start rolling till the end.

  1. Put the toothpick to hold the zucchini roll together and serve immediately.

Tips:

  • Serve it immediately as zucchini becomes tender after sometime and loses it crispiness and also, goat cheese oozes out water if left for long time.
  • You can serve it with regular tomato ketchup or as is.
