Mango Shrikhand / Amrakhand (Mango Yogurt Pudding)

Mango Shrikhand

Mango Shrikhand is one of the most favorite dessert in the western parts of India. In hot summer months, this dessert is so refreshing that it is loved by everyone. My hubby loves Shrikhand too and usually goes to a restaurant here in U.S. to satisfy his craving for this delightful dessert. This time I decided to try it at home and to my surprise it came out to be very good. It is a quick and easy dessert and frankly, does not require any cooking skills.



Ingredients:


1 cup plain yogurt (try that it is not sour)
½ cup mango puree
1 tablespoon sugar or to taste
3-4 green cardamom
3-4 saffron strands
Pistachios for garnishing
2-3 saffron strands for garnishing

  1. Hang the yogurt in a muslin cloth for 5-6 hours, till it is soft and creamy with  no water.
  2. Chop the mangoes and puree in blender.
  3. Whisk the hung yogurt in a mixing bowl.
  4. Make a fine powder of the green cardamom using pestle and mortar.
  5. Dissolve the saffron strands in 1 tablespoon of hot water.
  6. Chop the pistachios for garnishing.
  7. Now, add in the mango puree, cardamom, saffron water, sugar in the bowl of whisked yogurt.
  8. Transfer the mango shrikhand in the serving bowl and chill in refrigerator before serving.


Tips:


  • Use yogurt which is not sour else you will end up adding in more sugar and it might not taste that good.
  • You can also use packaged mango pulp available in grocery stores. But be careful in adding sugar in this case, as it already has added sugar.
