Rice fritters are easy way to finish of leftover rice sitting in your refrigerator. I made two versions- one with stuffed cheese and other non stuffed, both came out to be very good and were loved by both hubby and kiddos.

Rice fritters are crisp, tasty snack prepared in minutes.

Serves: 3-4 (makes 14 pieces)
Preparation time: 8-10 mins.
Cooking time: 15-20 mins.

Ingredients:

2 cups cooked rice(tightly packed)
1 medium sized onion (finely chopped)
1 teaspoon cumin
2 green chili (finely chopped)
4 tablespoon gram flour (besan)
Few coriander leaves (finely chopped)
1 inch ginger piece (finely chopped or grated)
1 teaspoon red chilli powder
1 teaspoon garam masala
About 100 gms. Processed cheese
salt as required
Oil for deep frying

Directions:

  1. In a large bowl, mash the rice and add all the ingredients. Mix well so that the spices are distributed evenly.
  2. Divide the mixture into two parts, from one part we make cheese stuffed fritters and from other we can make plain fritters.

  1. For plain fritters, just divide the mixture into 6 -7 parts and form round balls.
  2. For stuffed fritters, cut the cheese into ½ centimeter cubes. Divide the mixture into 6-7 parts and put the cheese in the center of each rice ball. Seal the cheese properly so that it does not ooze out while frying.
