Sama Rice Fritters.jpg

Sama Rice Fritters are made by cooking sama rice or vrat ke chawal and combining them with potatoes to make a tasty and delightful fritters or cutlets or tikki, whatever you like to call it.

I have already posted the recipe for mint-coriander chutney that goes very well with these. Also, I have posted recipe for vrat ke chawal ki kheer  and paneer kheer which you can prepare during fasting and complete your meal. So, no more “hungry” tummy, just “happy” tummy on those fasting days.

Serves: 15-18 fritters
Preparation time: 15 mins. to soak
Cooking time: 35-40 mins.

Ingredients:
To cook rice:
1/2 cup sama rice
1 ½ cups water

For the Fritters:
1 medium sized potato (boiled and mashed)
2 green chillies (finely chopped)
1 inch ginger (finely chopped)
Oil for frying
Rock salt (sendha namak) to taste
Black pepper powder to taste
2 tablespoons fresh coriander leaves (chopped)
½ tablespoon lemon juice (or as per taste)

Directions:

  1. Wash the sama rice and soak it for 15 mins. in water.
  2. In a pan, boil the rice in water on a medium flame until the rice is cooked completely. Add more water if you want.
  3. Once, the rice is cooked, spread on a flat surface/plate to cool them so that there is no moisture.
  4. Boil the potatoes and mash them in a large bowl.
  5. Now, add in cool rice, cumin powder, salt, pepper, ginger, cumin powder, green chillies and coriander leaves.
  6. Mash and mix all ingredients so that they are evenly distributed.
  7. Now, take the mixture in your hands to form round balls or flat tikkis.
  8. Heat oil in a deep pan/wok and fry the tikkis until golden brown.
  9. Flip in between to evenly cook the patties.
  10. Drain on kitchen towel to remove excess oil.
  11. Serve hot with green chutney.

Tips:

  • I cooked rice and kept in refrigerator to cool down.
  • You can use the leftover rice for this recipe or cook rice beforehand to make things faster.
