Aloo Palak Stir Fry | Aloo Palak ki Sabzi (Spinach and Potato Stir Fry in Indian spices)

“Aloo Palak” is easy to make meal (lunch or dinner) recipe. Just few ingredients like spinach and potatoes combined with indian spices makes this recipe simple yet delectable.


Serves: 2-3
Preparation time: 10-15 mins.
Cooking time: 15 mins.


Ingredients:


2 medium sized potatoes (boiled and cubed)
2 cups spinach leaves (chopped)
1 green chilli (finely chopped)
1 tablespoon oil
½ teaspoon turmeric powder
1 teaspoon Red chilli powder
½ teaspoon garam masala powder
½ teaspoon coriander powder
½ teaspoon cumin seeds
Salt to taste


Directions:


  1. Boil, peel and cube the potatoes.
  2. Wash and chop the spinach leaves. I did it in food processor to save on time and effort.
  3. In a kadai/pan, heat the oil and add in cumin seeds.
  4. As they splutter, add in chopped spinach. Cover and cook for 3-4 minutes.
  5. Now, spinach leaves would have wilted and reduced in volume, add in dry spices and salt and garam masala powder. Stir and mix well with the spices.
  6. Add in cubed potatoes and give a quick stir.Cover and cook for another 5 minutes or until the moisture from spinach leaves evaporate and you get a dry sabzi.
  7. Aloo Palak is ready to serve with hot phulkas or parathas along with raita of your choice.


Step By Step:
