Veg Pulao | Vegetable Pulao without pressure cooker

”Veg Pulao” is a recipe which is easy to make and loved by all rice lovers. It can be served as a rice dish along with raita or can be quick fix dinner recipe as well. I have used a lot of vegetables keeping kids in mind and you can add your choice of veggies for variations.



Serves: 3-4
Preparation time: 5-8 mins.
Cooking time: 15-20 mins.

Ingredients:

1 medium sized onion( sliced)
1 carrot (chopped)
4-5 broccoli florets
1 potato (cubed)
¼ cup green capsicum / bell pepper
¼ cup green peas
2 cup cooked white rice (basmati rice preferred)
½ teaspoon Cumin seeds
3-4 cloves
2 black cardamom
2 tej patta / bay leaf
Salt to taste
1 inch cinnamon stick
5-6 black peppercorns
2 teaspoons ghee /clarified butter

Directions:

  1. Cook 2 cups of rice with 4 cups of water in a saucepan and bring to boil. Simmer while you stir and rice is cooked al dante.
  2. Strain the rice and keep aside.
  3. Heat oil in the pan, add in cumin seeds and other spices: bay leaf, cardamom, cloves, cinnamon stick.
  4. Once they begin to splutter, add in peppercorns and then sliced onion and saute until golden brown.
  5. Now, add in vegetables of your choice and add salt. Cover and cook until vegetables turn tender yet crisp.
  6. Now, stir in cooked rice and mix gently.
  7. Serve hot immediately with your choice of raita.

Tips:
  • Cooked rice can be refrigerated for few minutes before adding into the recipe. This avoids rice dish getting mushy while cooking.
