Mango Chia Pudding | No Cook Mango Dessert | Healthy Mango Chia Pudding | Vegan Mango Pudding

Chia Seeds have recently been popular as super food and I have been trying new new ways to incorporate them in our daily diet. When I came across which chia pudding recipe I wanted to give it my twist and made this “Mango Chia Pudding”  which is SUPER healthy, contains SUPER food chia and no added sugar. DH is also happy as I find new ways to make healthy yet mouth watering desserts for him. It is SUPER easy and requires no cooking and ready in flat 10 minutes and tastes yummy!!! What else you want from a dessert if it satisfies your sweet tooth without sugar??



Serves: 1
Preparation time: 10 mins.
Cooking time: zero mins.

Ingredients:

1 medium sized  ripe mango
½ cup milk (Soy milk or coconut milk in case of vegan)
2 tablespoon chia seeds
1 tablespoon honey
1 dollop of hung curd or greek yogurt (for garnish and optional)
1-2 pistachios (for garnish)
Salt to taste

Directions:

  1. Take a bowl and add milk to it. Add honey in the same bowl and mix to dissolve.
  2. Add Chia seeds to the bowl and let stand for 10 minutes.
  3. Wash and peel the mango. Cut into small pieces and grind in the mixer jar to puree. Save some mango pieces for garnish.
  4. In a glass, layer the chia seeds and milk pudding until half full.
  5. Now, layer the mango pulp in it.
  6. Add the dollop of hung curd and top it with chopped mango pieces saved in step 3.
  7. Garnish with chopped pistachios and serve cold.

Tips:
  • You can dissolve chia seeds in milk and refrigerate until ready to serve.
  • Assemble the dessert with you want to serve.
  • Use your choice of soy milk or coconut milk for a vegan version of pudding.
