Sooji Laddu | Rava Laddu | Rava Laddu from Ghee residue | Leftover milk solids from Ghee

Sooji/Rava is healthy and nutritious so incorporating them in daily diet has many benefits. These “Sooji Laddu” are delicious mid morning or evening snacks for kids and adults too. These are quick and easy to make. I used  Khoya or Leftover milk solids from Ghee but you can use store bought khoya/mawa. Khoya adds in rich texture to these otherwise dry sooji laddu (and I wanted a way to finish off Leftover milk solids/khoya from ghee i made the previous day). So, make these delicious yummy snack for your kids or yourself.

Serves: 10 Laddus
Preparation time: 0 mins.
Cooking time: 10-15 mins.

Ingredients:


1 cup sooji
½ cup sugar
½ cup Khoya / leftover milk residue
⅓ cup cashew nuts + almonds (roughly chopped)
½ teaspoon cardamom powder (optional)
Ghee as required (i used 3-4 tablespoons)


Directions:


  1. Heat 3 tablespoons of ghee in a pan and roast the sooji until a little brown. It should loose its white color.
  2. Now, add in khoya and stir well until khoya starts to leave ghee/oil from it.
  3. Now, add sugar and mix well. Let cook for about a minute.
  4. Switch off the flame and add in chopped nuts of your choice.
  5. Mix well and allow to cool.
  6. When still warm but cool enough to handle, divide the mixture into 10 equal portions and make round balls to form laddus.
  7. Serve as is and store the remaining laddus in airtight container.

Tips:

  • Laddus stay good for 15 days when stored in airtight container in a cool place.
