Besan Bhindi Fry | Besan wali Bhindi | Besan Okra Stir Fry (Okra with roasted Gram flour)

“Besan Bhindi” or Besan wali bhindi or Besan Okra Stir Fry is a mouthwatering dish for all bhindi/okra lovers. Since at my home we have couple of Okra lovers, me and my son, I make bhindi quite often. This recipe comes from my MIL and is my to go when I need a beautiful looking and delicious recipe to entertain guests.

Serves: 3-4
Preparation time: 10-12 mins.
Cooking time: 25 mins.


Ingredients:


3 cups bhindi/okra
1 teaspoon jeera/ cumin seeds
A pinch of Hing / asafoetida
3 tablespoons Gram flour
½ teaspoon turmeric powder
½ teaspoon red chilli powder
1 teaspoon coriander powder
½ teaspoon garam masala powder
2 tablespoon oil
Salt to taste
1 tablespoon amchur/dry mango powder
Fresh coriander leaves for garnish


Directions:


  1. Wash the bhindi and let it dry for sometime.
  2. When completely dry, slit the bhindi lengthwise and cut into two halves and keep aside.
  3. In a pan, heat 2 tablespoon of oil and add cumin seeds and hing.
  4. Now, add turmeric to the oil and saute for a minute.
  5. Now, add in gram flour and roast until aromatic.
  6. Add in cut bhindi to this roasted besan mixture.
  7. Add in salt, red chilli powder, garam masala and coriander powder. Stir well to coat all bhindi with spices and gram flour mixture.
  8. Cook bhindi covered until tender for 5-8 minutes while stirring in between so that it does not stick to the bottom.
  9. Now, cook in open pan without cover for a crispy bhindi.
  10. Add in dry mango powder and garam masala and cook on a low flame.
  11. Besan Bhindi Fry | Besan wali Bhindi is ready to be served with hot pooris or paratha.

Tips:

  • Wash the bhindi before hand and let it dry completely before cutting, else it tends to get sticky. If you do not have time to wait for drying, you can wipe the excess water in bhindi by dry cloth.
  • Cook over low flame and do not skip adding dry mango powder and garam masala as it gives extra flavour to the dish.
