Paneer Sandwich | Cottage Cheese Stuffed Sandwich

“Paneer Sandwich”  is one of the easiest paneer recipe, ready in minutes. I often make it for my kiddos and they love it very much. I generally use homemade paneer as it is very soft and already crumbled for this recipe. Homemade paneer can be made while you prepare other ingredients for the stuffing and you can make a quick and healthy sandwich. This sandwich is satiating as well and very wholesome so you can make it for weekday meals as well when you don’t want to eat regular roti or rice.



Serves: 2-3
Preparation time: 10 mins.
Cooking time: 15 mins.

Ingredients:

6 bread slices (whole wheat or white bread)
1 ½ cups or 250 gms. Paneer (crumbled)
1 medium sized onion (finely chopped)
1 medium sized tomato (finely chopped)
1 teaspoon cumin seeds / jeera
2 tablespoon oil
1 teaspoon ginger garlic paste
1 green chilli (finely chopped)
1 teaspoon garam masala
¼ teaspoon red chilli powder
¼ teaspoon turmeric powder
¼ teaspoon coriander powder
Salt to taste

Directions:

  1. Gather all ingredients. Grate the paneer (if not using homemade) and chop the onions and tomatoes.
  2. In a non stick pan, heat oil and add in cumin seeds,as they splutter, add in onions. Saute for about 2-3 minutes or until they turn translucent. Now, add in ginger garlic paste and green chilli. Cook for 2 minutes on a low flame.
  3. Add in chopped tomatoes and fry until they turn mushy and start releasing oil.
  4. Now, add in red chili powder, turmeric powder,salt, coriander powder and garam masala powder. Mix well.
  5. Now, add crumbled paneer to the onion tomato mixture and cook covered for 3 minutes.
  6. Switch off the flame. Our stuffing is ready.
  7. Butter the bread slice on one side and then spread the paneer stuffing. Cover with another slice to form a sandwich.
  8. Butter the bread from outside and toast on heated griddle or tawa or in sandwich maker which ever is available until golden brown on both sides.
  9. Cut the bread in a diagonal and serve warm with tomato ketchup.

Tips:
  • You can make the stuffing in the night if you want to pack a quick lunch for your kids or yourself in the morning.
  • You can use store bought cottage cheese as well but grate it to get crumbled paneer.
